Tilapia, jumbo shrimp, spinach salad, and a vinaigrette.  What a mouth full!  Looks fancy, right?  This quick and easy tilapia and shrimp spinach salad recipe came in quite handy for a weekend luncheon with my neighbors.  The best part?  I got to watch and learn as my neighbor, Candice, showed me how to assemble this beautiful, filling meal.

Ingredients
  • 4 pieces tilapia
  • 4 pieces shrimp jumbo size
  • 1 package organic spinach large
  • 1 package croutons
  • 1 package crispy onion pieces
  • 1 package cranberries & roasted honey pecans
  • 10 strawberries sliced
  • 1 package crumbled feta cheese
  • 1 bottle cajun seasoning Weber brand
  • 1 bottle raspberry vinaigrette
  • 2 tsp olive oil
Servings: people
Instructions
  1. Prep: - clean strawberries & spinach - clean tilapia & shrimp - heat olive oil in a large skillet over low-medium stove top
  2. - lay fish and shrimp side by side, and season top with cajun seasoning. Season heavily and cover the top side completely.
  3. Cook the tilapia and shrimp: - place fish in skillet, seasoned side down - allow fish to cook on the first side until it is white more than halfway through the thickness of the fish. This ensures that this fish will be cooked thoroughly.
  4. - Season top of fish and turn over. - Cook the shrimp in the same manner, alongside the fish or after the fish is done cooking.
  5. Plate the salad ingredients: - create a large bed of spinach as the base - apply strawberries, dried cranberries & pecans, onion crisps, and croutons
  6. - place your cooked tilapia and shrimp on top of the salad - top with raspberry vinaigrette

This result was so delicious.  The process was so short and fun which made it perfect for an at home brunch with my neighbor ladies.  We chatted during the prep, and were chowing down in less than an hour!

    I have a confession – every time I see the fresh fish at the market I run away – I have NO clue how to cook fresh fish and the fish heads freak me out! You are such an amazing cook! You need a Old World New cookbook or something!

    i love a warm salad especially with seafood. I usually do salmon and shrimp but now you make me want to try it with tilapia. Looks so good.

    You had my attention when you said tilapia and shrimp in the same sentence! This salad looks fabulous! Pinning to my Summer Salads board. I am so ready for ‘salad season’! When I make this, I’ll have to sub the Cajun seasoning for something a little more mild but it will be good too!

    This looks so good! I love the idea of putting the fish with the salad. My husband and I are trying to eat more balanced meals, and this is one I think he could totally get behund.
